NIXTAMAL

Corn is the base of Mexican gastronomy. Nixtamal is the ancestral technique that transforms corn into tortilla dough. At Bakan we have the utmost respect for this tradition and our products are made every day with imported corn grains from Mexico. Then these are cooked with limewater to remove their outer layer and drain and grind in the same way as ancient villages with a volcanic stone metate.

The result of the nixtamalization process is a fine flour that, when added to water, forms the base for our preparation of tortillas, tamales, atole, and many more products. This process also gives corn great benefits, like increasing its nutritional value and improving its flavor and aroma. Simply spectacular.
